CHOCOLATE CHIP ICE CREAM SANDWICH COOKIES
This is a great do-ahead dessert and always a hit with all ages! They will keep in the freezer for months, however I doubt they will last that long.
Chocolate Chip Ice Cream Sandwich Cookies
Makes 20
Ingredients
Chocolate chip cookies (see recipe below)
1 ½ quarts (5 cups) Vanilla Ice Cream (see recipe below or buy your favorite vanilla ice cream)
Optional; sprinkles, mini chocolate chips or whatever your favorite topping might be.
Directions
If you do not have an ice cream maker, purchase your favorite vanilla ice cream and let it sit out on the counter for 5 minutes. It needs to be a little bit on the softer side to make the sandwiches.
To assemble the cookies, use an ice cream scoop to add the ice cream to one cookie, top with a second cookie and press down gently for ice cream to spread over the cookie.
If desired, dip the edges of the sandwich in sprinkles or mini chocolate chips or your favorite topping.
Place the ice cream sandwich cookies on a tray and place in the freezer for 20 minutes.
Take out of the freezer, wrap each cookie in wax paper then foil. Place back into the freezer for at least another 2 hours before serving.
Chocolate Chip Cookies
Ingredients
1 c Salted Butter, room temperature
1 c Sugar
1 c Brown Sugar
2 Eggs
1 tsp Vanilla
1 tsp Baking Soda
1 tsp Salt
2 ½ c Flour
2 c Chocolate Chip Morsels
1 c Walnuts, chopped (optional)
Directions
Preheat the oven 375°F.
Combine flour, salt and baking soda in a bowl and set aside. In a stand mixer, cream butter and sugars. Add eggs and vanilla.
Slowly, add in the dry ingredients.
Fold in the chocolate chips by hand
Drop by rounded tablespoons onto ungreased cookie sheets. Bake for 9-11 minutes.
Let sit for two minutes on the cookie sheet, then move to a rack to cool fully.
Makes 3 ½ dozen cookies
Vanilla Ice Cream
Ingredients
1 ½ c whole milk
3 c heavy cream
1 ⅛ c sugar
1 ½ tbsp vanilla extract
Equipment: Ice Cream maker
Directions
Add the whole milk and sugar to a stand mixer and mix for 2 minutes.
Add the heavy cream and vanilla and mix until all is combined.
Add to the ice cream maker for 25 minutes.
Transfer to an airtight container and freeze for at least 2-3 hours before using.
Makes about 1 ½ quarts.
