SAUSAGE SUB WITH SAUTÉED PEPPERS & ONION
Sausage Sub with Sautéed Peppers & Onions
Serves 4
Ingedients
4 Sweet Sausage, long
1 Red Pepper, sliced
1 Yellow Pepper, sliced
1 Onion, sliced
1 tbsp Extra Virgin Olive Oil
1 tbsp Butter
2 Cloves Garlic, minced
1 tsp Dried Oregano
½ tsp Coarse Kosher Salt
¼ tsp Black Pepper
4 Sub Rolls
Stone Ground Mustard or your favorite Mustard
Directions
Place the sausages in a large skillet and fill the water until the sausages are covered. Over medium high heat, bring to a boil, then turn to a simmer and cook uncovered for about 7-8 minutes. Transfer the sausages to a plate and set aside.
Empty the skillet and add butter and olive oil or medium low heat and add the peppers, onions, garlic, oregano, salt and pepper.
Cook for about 10-12 minutes over medium heat until soft, set aside.
While the peppers are cooking, sear the sausages on a hot grill. About 17 minutes, turning consistently for even cooking.
If you prefer your rolls toasted, brush with melted butter and toast on the grill for a few minutes.
Add the sausage onto the roll and pile the pepper and onions mixture and top with your favorite mustard.
Serve with chips, potato salad or both!
