ROASTED BROCCOLI

Roasted Broccoli

Serves 4 

Ingredients

  • 1 ½ pounds of Broccoli  

  • 4 tbsp Extra Virgin Olive Oil

  • 1 tsp Coarse Kosher Salt

  • 3 Garlic Cloves, minced

  • Zest of 1 lemon

  • ½ tsp Black Pepper

  • ¼ c Parmesan Cheese

Directions

Preheat the oven to 425°F.

  1. Cut the broccoli florets into bite-size pieces.  

  2. Add the broccoli to a bowl and add the olive oil, garlic, salt, pepper and mix well so all the florets are coated.  Add ¼ cup parmesan cheese and mix.

  3. Line a rimmed baking sheet with aluminum foil and spray with nonstick cooking spray. 

  4. Add the broccoli to the sheet pan and bake for about 12 minutes or until the florets are tender and the tips browned, tossing halfway through.   

If you want to add a little kick to the dish add a pinch or two of red pepper flakes.
