SLOW COOKER CHICKEN BACON RANCH SANDWICHES

Slow Cooker Chicken Bacon Ranch Sandwiches 

Serves 8

Ingredients

  • 1 ½ pounds Boneless Breasts

  • 8 oz Cream Cheese, softened and cut into cubes

  • 4 oz Goat Cheese, softened and cut into cubes

  • 1 oz package ranch salad dressing and seasoning mix

  • ½ pound bacon, cooked and crumbled

  • 1 cup shredded cheddar cheese or your favorite cheese. 

  • ¼ c fresh Parsley, chopped

  • ½ cup scallions chopped, for garnish

  • Ranch Dressing and Hot Sauce, garnish sandwich

  • 8 Bulkie or Onion Rolls

Directions

Preheat the oven to 350°F

  1. Place the slow cooker on high. 

  2. For easy clean up add a slow cooker liner.

  3.  Put the chicken in the slow cooker and sprinkle the ranch seasoning mix on both sides of the chicken.

  4. Top the chicken with cream cheese and goat cheese.  

  5. Cover and cook on high for 3 - 3 ½ hours.  

  6. While the chicken is cooking, add the bacon to a rimmed sheet pan lined with aluminum foil (x2) and cook the bacon until crispy. Crumble bacon and set aside.

  7. When the chicken is done, using two forks, shred the chicken. It should shred easily.

  8.  Sprinkle cheese, bacon and parsley on top and mix then cover and cook for another 15 minutes.

  9. Turn off the slow cooker and sprinkle green onions over the top.

  10. Serve on toasted buns with ranch dressing and hot sauce on the side.
