Roasted Zucchini

Serves 4

Ingredients

  • 2 lbs Zucchini, cut into ½ inch rounds

  • 1/4 c Extra Virgin Olive Oil

  • 3 Garlic Cloves, minced

  • 1 ½ Tsp Dried Oregano

  • 1 Tsp Coarse Kosher Salt

  • ½ Tsp Black Pepper

  • 2 tbsp Grated Parmesan

Directions

Preheat the oven to 400°F.

  1. Add the olive oil, garlic, oregano, parmesan, salt and pepper to a small bowl and mix well.

  2. Add zucchini to a medium size bowl and add the olive oil mixture.  

  3. Mix well, I use my hands to make sure all sides are coated.

  4. Add the zucchini to a small rimmed sheet pan covered in aluminum foil and sprayed with cooking spray. 

    At this point you can cover and leave in the refrigerator until ready to cook.  If you do, let it sit on the counter for 15 minutes for cooking.

  5. Cook for 25 minutes and broil for 3-4 minutes until crispy and golden on top.  Always keep an eye on your food when broiling.
