YOGURT PARFAIT WITH GRANOLA & FRESH BERRIES
You can serve this in a bowl or make it fancy & serve it in a stemless wine glass.
Yogurt Parfait with Granola & Fresh Berries
Ingredients
½ c Greek Plain Yogurt, plus a dollop, preferred brand Fage
¼ c Granola plus a 1 Tbsp (recipe below)
½ c Fresh Berries of your choice, plus a few for garnish
Directions
Add ½ c greek yogurt to the glass.
Top with ¼ c granola then berries.
Top with a dollop of yogurt and sprinkle 1 tbsp granola over top.
Garnish with a fresh berry.
Granola
Ingredients
2 ½ c Old Fashioned Oats
½ c Sliced Almonds
½ c Chopped Pecans
1 Tbsp Ground Cinnamon
¾ c Creamy Peanut Butter
½ c Honey
1 ½ Tsp Pure Vanilla Extract
Directions
Preheat the oven to 300°F
Line a rimmed baking sheet with aluminum foil, then line with parchment paper. Set aside.
In a large mixing bowl add oats, nuts and cinnamon and mix well.
In a smaller bowl add the peanut butter, honey and vanilla and mix until creamy.
Add the peanut butter mixture to the oat mixture. Stir until combined.
Once combined, spread the granola on the sheet pan.
Bake for 13 minutes and then using a large spatula turn the mixture over, breaking it into clusters and bake for another 12 minutes.
Remove from the oven, it will harden as it cools.
Let it cool completely and then place the granola into an airtight container.
Can be kept for up to 3 months in a cool, dry spot. You can also freeze the granola in a ziplock freezer bag/air tight container for up to 6 months.
