CHICKEN AND CAULIFLOWER RICE SOUP

In less than 30 minutes you can have low carb homemade chicken and cauliflower rice soup.  It is so delicious and so easy.  

Chicken and Cauliflower Rice Soup

Ingredients

  • One rotisserie chicken, deboned and meat cut up into small chunks

  • 12 c of Chicken Broth

  • 1 package of Knorr's Vegetable Soup Mix

  • 2-3 Large Carrots, peeled and diced

  • 2-3 Stalks of Celery, diced

  • 1 Onion, diced

  • 2 c Cauliflower Rice (I use frozen)

  • 1 tsp Pepper

  • 2 tbsp Fresh Parsley, chopped

Directions

  1. Add the chicken broth, cauliflower rice, soup mix, carrots, celery, onion, and pepper to a stock pot and bring to a boil over medium heat.

  2. Simmer for 25 minutes.

  3. Turn off heat and add in chicken and parsley.

  4. Add salt to taste.

  5. Serve with parmesan crisps.
