My Mom’s recipe and she made these for us growing up.  So delicious!!

Ginger Kringles

Makes 2 dozen

Ingredients

  • 2 c Flour

  • ¾ c Sugar, plus ¼ c Sugar (to roll cookies in)

  • ⅔ c Vegetable Oil

  • 1 Egg

  • 1 Tsp Cinnamon

  • 1 ½ Tsp Ground Ginger

  • 2 Tsp Baking Soda

  • ½ c Molasses

Directions

Preheat the Oven to 325F°

  1. Combine flour, cinnamon, ginger, and baking soda in a bowl and set aside. 

  2. In a stand mixer, add sugar, egg, vegetable oil & molasses and mix.

  3. Add the dry ingredients into the stand mixer.

  4. Scoup into balls (about heaping tbsp) then roll in sugar.

  5. Add to an ungreased cookie sheet and bake for 12-14 minutes or until the centers start to crack.

  6. Let them cool for 5 minutes on the cookie sheet then transfer to a wire rack to cool completely.
