PARMESAN ROASTED PORK CHOPS

This is one of my go-to low carb meals.  The parmesan coating makes the pork chop crispy - you really do not miss the bread crumbs.

Parmesan Roasted Pork Chops

Serves 4

Ingredients

  • 8 bone-in sliced thin center cut pork chops

  • 1 egg

  • ¼ c mayonnaise

  • 1 heaping tbsp Dijon

  • 2 tsp Franks red hot sauce or whatever kind you prefer

  • 1 c grated parmesan cheese

  • ¼ c fresh parsley, chopped, plus some for garnish

  • ¼ tsp Season All

  • ¼ tsp ground pepper

Directions

  1. Preheat the oven to 425°F.

  2. Dry the pork chops with a paper towel and season with season all and pepper on both sides.  

  3. Mix egg, mayonnaise, dijon and hot sauce together in a dish.  

  4. Mix parmesan cheese and parsley in another dish.

  5. Dip the pork chops into the egg mixture, then the parmesan mixture.   

  6. Add the pork chops to a rimmed sheet pan sprayed with cooking spray (for less clean up line the pan with aluminum foil). 

  7. Cook for 14-15 minutes, then broil for 2-3 minutes or until golden.        

    **Always keep an eye on your food when broiling.

  8. Garnish with parsley and serve two pork chops per person.

NOTE: This recipe can be made ahead of time and just cover the sheet pan with foil and leave in the refrigerator until you are ready to cook.  Before you place it in the oven let it sit on the counter for 15 minutes.
