SAUSAGE, PEPPERS & ONIONS SHEET PAN

Sausage, Peppers & Onions Sheet Pan

Serves 6

Ingredients

  • 1 lb Sweet Italian Sausage Links

  • 1 lb Hot Italian Sausage Links

  • 1 Vidalia Onion, cut into 1-inch pieces

  • 1 Red Onion, cut into 1-inch pieces

  • 3 Bell Peppers, assorted colors, cut into 1-inch pieces

  • 2 Tbsp Extra Virgin Olive Oil

  • ½ Tsp Garlic Powder

  • ½ Tsp Dired Oregano

  • 1 Tsp Coarse Kosher Salt

  • ½ Tsp Black Pepper

  • 2 Tbsp Fresh Parsley, chopped for garnish

  • 6 Hoagie Rolls

Direction

Preheat the oven to 425F

  1. Line a medium sized sheet pan with aluminum foil sprayed with cooking spray.

  2. Place the onions and bell peppers in a medium sized bowl and mix with the olive oil, garlic powder, salt and pepper.  Add to the sheet pan in a single layer.

  3. Nestle the sausages amongst the onions & peppers.

  4. Bake until the peppers & onions are tender and the sausage is browned and cooked through (internal temp should be 145F). This will take about 25-30 minutes.  

  5. About halfway through give everything a good stir and put it back into the oven.

  6. Garnish with Parsley.

  7. Divide the sausage links, onions & peppers on Hoagie rolls or keep it low carb and forget the rolls.  Enjoy!
